Set across 4.2 acres of restored Victorian charm, replete with walled gardens and a purpose-built restaurant, Ómós promises soulful Irish hospitality shaped with intention.

While the much anticipated new venture quietly takes shape on the edge of Abbeyleix, its talented chef-owner Cúán Greene is giving early supporters a chance to step inside the story before the doors even open.

He’s released a limited selection of gift vouchers which make an ideal present for anyone who loves being ahead of the curve. And here’s the sweetener – voucher holders get first dibs on reservations when bookings open next year.

Speaking about the new venture the inventive chef says, “We’re building something with real care and intention, and these vouchers are a way for people to support that vision early, and to be among the first through to sample Ómós hospitality when we open. It feels right to give those who believe in what we’re doing that opportunity.”

As readers of his popular blog will be aware, Cúán is committed to crafting food that’s grounded, generous, and deeply connected to place.

For a lucky few, the welcome starts now, and it’s a great way of supporting all that’s good about Irish food provenance, while gaining advance access to one of the most anticipated openings of 2026.
