Truffle Love: The Unicorn Celebrates its First Birthday with a Month of Risotto

A little truffle magic goes a long way to brighten the dreary days of November, and The Unicorn’s first birthday celebrations are the perfect excuse for indulging in Risotto, the ultimate Italian comfort dish.

This month sees Chef Patron Kristan Burness serve up a month-long ode to the Italian specialty, as each night brings a new creation. Inspired by the season’s best and Burness’s own culinary mood board, the Unicorn’s take on the classic will change nightly, featuring a gorgeous pairing of lobster and saffron one evening, wild mushroom and aged Parmesan the next.

With a variety of other flavour combos set to be revealed over the coming days and weeks, Burness says, “Risotto is the perfect canvas for creativity — simple, elegant, and endlessly expressive. This celebration is my way of thanking our guests for a wonderful first year, and of sharing the dishes I love most.”

The innovative chef has also succeeded in sourcing rare white truffles from Alba, teaming up with Ireland’s mushroom guru Bill O’Dea for a flavour-packed Italian-Irish extravaganza.

The month long celebrations also include the current A La Carte menu, featuring such popular dishes as Vitello Tonnato, Ligurian Zuppa di Pesce and Unicorn Linguine alla Carbonara with Hick’s artisanal smoked bacon, organic egg yolks and pecorino.
