New look and New Brews at J.T. Pim’s

We recently caught up with Daire McLoughlin and Ross McIntyre to talk about J.T. Pim’s recent refurb and their new and exciting wine, cocktail and craft beer menus.

 

So J.T. Pim’s has undergone a bit of a makeover of late, what’s been done?

We’ve gone with a completely new colour scheme – rich teals and greens for the paint and gold and honey comb for the wallpaper, giving the place a more contemporary and luxurious feel. We also got some beautiful signage done in gold leaf, taking inspiration from old ads for the Pim’s Department Store; which is where we got our name from!

 

What changes to your wine offerings have you undertaken? What new discoveries can customers expect?

We have a brand new wine list in partnership with Gilbeys-Bibendum Wines. Introducing some outstanding classics like our Stoneburn Sauvignon Blanc from Marlborough New Zealand to something a little quirky like our Laurenz V Singing Gruner Veltliner from Austria.

Tell us about your new cocktail list – what sets yours apart from others and any stand out customer favourites?

J.T. Pim’s new cocktail menu boasts a variety of house twists on reserved classic cocktails and completely new creations. It’s a seasonal menu inspired by fresh exotic produce and flavours to pair well with spring and summer.

In creating the cocktail menu we tried to imbue the cocktails with the atmosphere which surrounds you when you enter J.T. Pim’s; which is very much a cool, relaxed and enjoyable environment.

Particular customer favourites which have stood out for us so far have been our “Pomegranate & Ginger Bramble”, using Beefeater Gin, Lemon, Pomegranate and Ginger Beer and also our “Chasing the Dragon” cocktail which combines Plymouth Dry Gin with a homemade Dragon Fruit Cordial, Lemon and Gelatin to produce an outstandingly refreshing summer drink.

 

What craft beers do you offer? Any new ones to look out for?

We are pleased to introduce the full 5 Lamps range which includes the new 5 Lamps Red and 5 Lamps Light and the full Galway Hooker range which includes the new Galway Hooker 60 Knots IPA by the bottle.

Yes, we have a great new team in the kitchen working on our all new lunch, evening and brunch menus. Coming soon!
