Bitesize: Boyne Bounty at Slane Castle

With most of us staying close to base at the moment, less than an hour away, the ancient village of Slane is fast becoming a very appealing weekend destination for foodies.

This summer sees Keith Coleman and Aisling McHugh of the Roots Project overseeing outdoor dining at Slane Castle, with the much vaunted opening of Allta’s innovative Summer House just one of a host of gastronomic joys to be enjoyed there.

The Silver Fox Food Truck serves up a lovely selection of bites made using Tanworth pork and locally grown seasonal produce from nearby Rock Farm, while the majestic Castle Courtyard has been transformed into a Taqueria-inspired cocktail and casual eats venue.

The rich bounty of the Boyne Valley can also be enjoyed at the weekly artisan farmers market on Thursdays 11-4p.m. at Rock Farm Slane on the estate, and the views alone make the prospect of a day trip to magical Meath more than worth your while.
