Dublin has a new place to linger — and it’s all about slowing things down and taking time to smell the coffee. Volumes Café is a new space on George’s Quay created by Mark Cashen, Paddy Kirk and Fionn Dwyer Hyland, a trio of friends united by a shared love of design, food, coffee and community.

The roots of the new venture marry Mark’s ‘farmer-first’ ethos and love of great produce at As One, Fionn’s experience working in Bastible and Lord’s in New York, underpinned by the research conducted by Paddy for his recent publication, The Dublin Coffee Guide, a five year labour of love featuring photos and interviews with those behind fifty of Dublin’s best loved independent cafés and coffee shops.

Inspired by time spent roaming around coffee shops and bakeries in Copenhagen, New York, London, Madrid and Berlin, Volumes distills the best of each of those cities and brings it all home to Dublin.

A first glance reveals a calm, considered space where aesthetics matter just as much as what’s on the plate. Design lovers will undoubtedly appreciate the trio’s collaboration with Copenhagen-based studio FRAMA, with every detail of the fit-out carefully measured and thought through, while food-wise, local produce leads the way.

With everything made in-house on a daily basis, we’re told that the menu is set to evolve over time, but for now diners can expect a bagels, pastries and sandwiches made on house-made rolls.

Bagels are mixed, rolled, boiled and baked on site in an open kitchen and bakery, then served with whipped cream cheese from Hayes Farm, Co. Tipperary, topped with great produce such as Goatsbridge trout and Connolly’s bacon.

Open at 15 George’s Quay, Dublin 2. Current hours are Monday–Friday, from 7am – 4pm. Weekends coming soon.
