Big chef energy is heading for Trinity Street this month as Pichet teams up with Ashford Castle for a one-night-only pop-up worth clearing the diary for.
Sunday 22nd February sees East meet West as Pichet’s Harry Quinn joins forces with Ashford Castle Executive Chef Liam Finnegan for a slick six-course tasting menu celebrating the best of Irish produce. Expect seasonal ingredients, plenty of finesse and a menu featuring goodies picked straight from Ashford’s organic kitchen garden served in the salubrious surroundings of Pichet.
Billed as a collaboration of culinary masters, a quick look at the delicious menu reveals a starter of Ashford Estate Ricotta Pumpkin, with Hawthorn and Nasturtium, followed by Cured Organic Trout served with Potato Bread, Cucumber, Elderflower, and Rillettes.
Next up is a dish of Turbot with Carrot, Sea Buckthorn, Rosemary, and Lobster, while the fourth course features Slow Cooked Beef Cheek, with Artichoke and Bearnaise. Rounding things off is a gorgeous Black Velvet Sorbet with a finale of Komontu Dark Chocolate Mousse with Blood Orange bringing proceedings to a very satisfying close.

The event is part of popular The Friends of Pichet series, celebrating creativity and a shared passion for exceptional food, which has over the years become a highlight of the city’s culinary calendar.
Speaking ahead of the latest episode in the series, Liam Finnegan said, “What excites me most about this collaboration is the shared respect we all have for Irish ingredients. It’s about letting great produce speak for itself, and when chefs with the same passion come together, something special happens.”
A spring outing that promises to be elegant, comforting and confident – definitely one for the city’s serious food fans.
