An intriguing rethink of modern hospitality – a chef’s studio that works behind the scenes all week before opening its doors for one memorable night of food, conversation and connection…

That’s the premise of the new venture by chef, author and TV presenter Mark Moriarty, as he gets set to blur the lines between restaurant, test kitchen and creative studio this summer.

He tells us that the the launch of Mark Moriarty Studio, an intimate new dining space opening beneath Wilton Park in Dublin 2 this August, is distinctly different to the traditional restaurant model.

By day, the Studio will be Moriarty’s headquarters for recipe development, filming, collaborations and private events. Come Friday evening, however, it transforms into one of the city’s most exclusive dinner experiences, with just 40 guests welcomed across two sittings.

With a space designed to feel more like an elegant dinner party than fine dining, guests are invited to pull up a seat at the open kitchen counter, settle into the snug or gather around the communal table while Moriarty and head chef Odhran Devine serve a seasonal six-to-seven-course tasting menu (€150) built around great Irish produce.

In addition to a specially chosen wine list, and a signature Dead Rabbit Irish Coffee, the newcomer offers a chance to watch every dish come together just inches from your seat.

“This is an exciting new one-off venture for me, and for my team. We’ll be working here Monday to Friday, with weekends off, so we’re doing something pretty unique in the business. I don’t know if there’s anything quite like it anywhere. The plan is that Mark Moriarty Studio can create a sustainable, modern way of working that will only serve to enhance the quality of our hospitality.”

Bookings for Friday nights from August 7th open on July 1st at 10am. With only 40 places available each week, featuring an early sitting from 5.30pm to 8pm, and a late sitting from 8.30pm to 11pm, we suspect they won’t hang around for long.
