At 17 – Pichet Dishes Up The Sweet Stuff

This month sees Trinity Street institution Pichet marking seventeen landmark years with a signature birthday dessert that sounds like the perfect reason to skip straight to the sweet stuff.

Their indulgent 17th Birthday French Toast is made with thick-cut brioche, fried in foaming butter until golden and caramelised, then topped with seasonal Irish strawberries and whipped vanilla mascapone.

The dish comes with a fragrant fig leaf custard on the side, an unusual twist courtesy of chefs Marin Radev and Oisín McMahon, who recently returned from Croatia with fresh fig leaves, inspiring Head Chef Harry Quinn and founder Stephen Gibson to experiment with their delicate, aromatic flavour.

The result is a lush, celebratory dessert that beautifully embodies the kitchen’s knack for giving familiar dishes a distinctive Irish twist.

Stephen Gibson describes it as ‘rich, nostalgic and just a little bit unexpected’, not unlike the secret sauce that has kept Pichet regulars coming back again and again since 2009.

Tuck in at the popular French influenced bistro until Sept 30th.
