Over in North County Dublin it’s all about letting the coastline do the talking as Portmarnock Resort & Jameson Golf Links enters a new food era.

Having quietly come on board last year, new Executive Head Chef Peter Limbeck has been busy overhauling the resort’s dining offering, with the spotlight firmly on seafood-led plates at The Seaview Restaurant.

The result is a gorgeous new menu inspired by the Irish Sea, featuring some incredible maritime treats such as Miso-Glazed Octopus, Black Pudding with Scallops, and inky Risotto Nero, alongside a delicious range of meat and veggie options. 

In addition, a refreshed afternoon tea offering boasts a strong pastry game thanks to chef Alberto Borguna, with a reworked menu featuring everything from Côte de Boeuf to Prawn Pil Pil being dished up at the Jameson Bar in the original house built in 1847.

Speaking about the thinking behind the new food offerings, Limbeck says, “I’m often inspired by trends in the industry but also by the local community. Ireland has fantastic seafood and fresh produce, and how can I not be inspired by the magnificent location of Portmarnock Resort? I cannot wait for people to come along and try it out, and for the opportunity to get to know more of our local neighbours.”

As the waterside venue celebrates its thirtieth anniversary this year, it’s an invitation worth taking up, with the chance to sample the food alone making the short half hour trip along the coast more than worth your while.
