May is Coeliac Awareness Month, and if you’ve been side-eyeing menus since forever, here’s some genuinely tasty news.

Having officially gone full on gluten free a while back, the accommodating folk at Glas Restaurant go to great lengths to ensure that no wheat, barley or rye cross the threshold of their kitchen.

As the country’s first fine dining spot to ditch gluten from the entire menu, under Head Chef Malte Half, Glas is doubling down on inclusive dining without sacrificing an ounce of flavour or flair.

The veggie-forward city-centre fav has long been loved for its clever, produce-led plates, and now, thanks to its approach featuring Irish-grown ingredients, a series of elegant seasonal dishes, and thoughtful cooking, everyone can relax, enjoy the food and forget labels like ‘gluten-free’ or ‘plant-based’.

As the team puts it, “At Glas, we are all about inclusive dining — meaning we want as many people as possible to enjoy our food.”

We reckon their menu looks less like a dietary workaround and more like the future of dining.
