Rascals Brewing Company tips its hat to Inchicore neighbours Kari this month with two limited-edition pizzas inspired by the restaurant’s distinctively layered Indian flavours.
Following a stint in Kari’s kitchen with owners Bala Nayak and Nidhi Joshi, Rascals’ head chef Felipe Santos Souza and chef Evelin Daniele set about translating those buttery, aromatic, slow-build spices into pizza form.
Speaking about the collaboration, Rascals’ head chef Felipe Santos Souza tells us it that the underlying thinking is about “understanding the layers of flavour and how spices are built – how heat, creaminess and aromatics work together – and then translating that into something that fits what we do here at Rascals.”
The result is two tasty pizza specials that can be enjoyed at Rascals throughout the month of April.

First up is Kari Gold, which they tell us is built on a rich, spiced sauce of red onion, butter, garlic, ginger and warming garam masala, cumin, turmeric and chilli, finished with cream.
The pizza is then topped with mozzarella, fresh coriander and gorgeous tender chicken marinated in yogurt, lemon and tandoori spices.
Then there’s Green Day, a stunning veggie take featuring a fragrant spinach cream with garlic, ginger, red onion and cumin, topped with paneer, mozzarella and spinach, and finished with a punchy beetroot cream of yogurt, beetroot and cream cheese.
Pair either with a drop of Rascals’ Happy Days Pale Ale and well… happy days!
