Two of Wicklow’s finest join forces this winter as neighbours Glendalough Distillery and Wicklow Wolf Brewery release The Still Hand, a limited-edition 13.1% Barleywine with serious mythic energy.
Inspired by the legend of St Kevin’s famously patient ‘still hand’ the slow-crafted sipper has been aged in Glendalough’s ex-Oloroso whiskey barrels, and comes laden with caramel, dried fruit swagger, and a hint of sherry sweetness.
Reflecting on the process of connecting the worlds of Wicklow whiskey and beer, Ciarán ‘Rowdy’ Rooney, Head Distiller at Glendalough Distillery tells us that the collaboration has been a long time coming. “We’ve been neighbours and friends for years, so it’s brilliant to finally come together on something that truly celebrates Wicklow craft.”
Echoing those sentiments, John Allen of Wicklow Wolf adds, “Working together on The Still Hand felt like a natural fit. This is a celebration of time, place and process that happens when you slow down and let flavour evolve.”
