January is looking a whole lot warmer thanks to a sip-and-savour night in one of Dublin’s most glamorous rooms. Café en Seine is teaming up with Redbreast for a decadent five-course tasting with a whiskey expert on hand to guide diners through some of Ireland’s finest drops.
Stars of the evening range from the iconic 12 Year Old to the lush 27, each paired with a dish from Head Chef Stephen Gibson’s flavoursome kitchen.
Diners can look forward to tucking into Smoked Salmon Croquettes with Redbreast 12 year old, Jerusalem Artichoke Risotto with Redbreast Lustau, and Suckling Pig Belly, Brown Butter Cauliflower, Black Pudding and Raisin Ketchup with the 18 year old.
Then there’s a dish of delicious John Stone Beef Fillet served with the Redbreast 15 year old, and for afters, Sticky Toffee Pudding with whiskey caramel sauce, pecans and clotted cream with Redbreast PX. Then as a final flourish, there’s a drop of the stunning 27 Year Old to send you merrily on your way.

Speaking about the event, Stephen Gibson says, “This collaboration is all about creating something memorable that celebrates flavours, tradition, and togetherness”, adding that working with Redbreast brings “depth, warmth, and Irish soul” to the table.
The event takes place in Café en Seine, Dawson Street on Tuesday January 13th, 2026. Limited tickets cost €66 + booking fee and include five courses with delicious Redbreast pairings.
