If you want to know where the hot bartender action is going on in the city once we reopen you may want to check out Cal Byrne in the Blind Pig Speakeasy.

He became the first ever Irish bartender to make it to the final 10 in the World Class Bartender of The Year (virtual) competition.

Creating a drink infused with natural dyes used in wool jumpers, Cal chose these ingredients to highlight his project to connect artists and traditional craftspeople whose livelihoods have been hit during the pandemic (see ingredients below).

Formerly connected with Pharmacia and 101 in Limerick, Byrne will be back honing his skills in the basement and he might even shake some dye for ya.

His fellow contestants for the Irish crown wereL Emmy Pip Knight from Ohana Tiki Bar, Ali Hayes from the Exchequer Bar, Ken Herlihy from House and Fergus O’Leary from The Mayson Hotel.

The world winner was James Grant from Little Hong Kong in Edmonton, Canada.

Cal Byrne’s winning Tiki Cocktail, On Giant’s Shoulders, consisted of:

  • Roe & Co Irish Whiskey
  • Bunratty Honey Mead
  • Purple Tiger Juice
  • Acid Adjusted Apple Juice
  • Malted Barley Honey
