Given the current state of global chassis, we’re not entirely sure what the prospect of getting off the ground might look like out in Collinstown this summer, but whatever happens, Carlton Dublin Airport is determined that flyers will enjoy their stopover with them.
To celebrate their 20th anniversary, the northside hotel has just launched a new cocktail menu, enabling guests to sample a taste of Ireland during their visit to our native shores.

Inspired by Irish mythology, the nicely curated selection can currently be found in the Runway 28 Bar and Restaurant. It brings guests on a small journey into Ireland’s ancient storytelling culture, based on legends such as the Children of Lir, and seasons such as Bealtaine.
It’s also possible to enjoy a taste of the menu from the comfort of home, courtesy of the recipe below.

Recipe for DRAÍOCHT (Magic)
A light, botanical cocktail reflecting the natural magic and renewal of the season.
Ingredients
Tanqueray Gin
Fresh raspberry
Lillet Rosé
Pressed lemon
Sugar syrup.
Method
Muddle raspberries in a shaker
Add remaining ingredients and ice
Shake well and fine strain into a glass
Garnish with fresh berries.
